Ernie Whalley, grew up working in his aunts’ hotel kitchens. He wrote on food, drink and travel in the UK before settling in Ireland in 1987. 

Now one of Ireland’s most experienced food and drink writers,  he ran his own Dublin café/restaurant before joining Food & Wine Magazine as Deputy Editor in 1999, later, editing the magazine from 2002-2006. 

In 2002, he launched, Ireland’s first dedicated food and drink website.

He has written for innumerable publications worldwide and appeared on radio and TV food & drink programmes. in several countries. 

Judging stints include The Cordon Bleu World Food and Drink Media Awards, the Bocuse d’Or, Ruinart World Sommelier of the Year, plus wine competitions in five countries. 

Under the brand of “One Man & His Hob”  he gave cookery classes from his own kitchen.

He has represented Ireland on five occasions at the prestigious food and wine symposium, Tasting Australia.

Ernie was elected a Member of The Food & Wine Hall of Fame in 2018

When not writing on food and drink Ernie cooks, bakes bread, makes his own sausages, yoghurt, roasts coffee and, in another life, is the singer/songwriter “Spike Lancaster”.
